Our “Go To” Gumbo Recipe
February 23, 2012
I don't remember where we got this gumbo recipe or if we just made it up with some leftover ingredients that we had lying around awhile back. Anywho, it's a quick, easy and quite tasty recipe that we probably make once a week. It's convenient after a long training day when you're dead tired since you just throw all 7 ingredients in a pot and let it simmer.
Gumbo Recipe:
1 pound ground meat
1 pound of lean sausage (we use venison or chicken sausage)
1 bag frozen spinach
1 bag frozen cut okra
1 can crushed tomatos
1 TBSP cumin
3-4 cloves of garlic
In a large pot, simmer the ground meat and sausage until brown. Add the rest of the ingredients and let simmer while you go take a shower. The recipe probably makes about 8 servings for normal people and more like 3 for hungry triathletes. Enjoy!

Amy,
I enjoy reading about your adventures and successes. Thank you for sharing them. It sounds like you are enjoying every minute of life (except maybe that spill last year that I saw pictures of….ouch!) I just wanted to say Im really proud to have swam with you back in the day and I wish you continued success!
